Ingredients:  

Main Ingredients

  • 1 cup dried black beans rinsed and drained
  • 1 cup long-grain white rice
  • 1 small onion diced
  • 2 cloves garlic minced
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 teaspoon salt
  • 2.5 cups vegetable broth
  • 1 can diced tomatoes undrained

Optional Toppings

  • chopped cilantro
  • avocado
  • lime wedges

Instructions: 

  • Place all ingredients (except optional toppings) in the Instant Pot.
  • Close the lid, set the valve to sealing, and cook on high pressure for 25 minutes.
  • Allow for a natural pressure release for 10 minutes, then do a quick release.
  • Stir the beans and rice mixture well before serving.
  • Serve hot with optional toppings as desired.

Notes:

For a spicier version, add a diced jalapeño or a pinch of cayenne pepper.
