Ingredients:  

Main Ingredients

  • 1 whole chicken carcass
  • 1 onion, quartered
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 2 cloves garlic, smashed
  • 1 bay leaf
  • 1 teaspoon whole peppercorns
  • as needed water to cover ingredients

Instructions: 

  • Place all ingredients in the Instant Pot.
  • Fill with water until ingredients are covered.
  • Close the lid and set to high pressure for 1 hour.
  • Allow for natural pressure release.
  • Strain the stock and discard solids.
  • Use immediately or store in the fridge or freezer.

Notes:

This stock can be used as a base for soups, stews, and other recipes. It can be stored in the refrigerator for up to 5 days or in the freezer for up to 3 months.
