Salt and pepper to taste
Fresh parsley for garnish
Instructions:
Rinse the lentils under cold water and set aside.
Turn on the Instant Pot to sauté mode and add a bit of oil.
Sauté the onion, carrots, celery, and garlic until softened.
Add the cumin, paprika, and turmeric, and cook for another minute.
Pour in the vegetable broth and add the lentils.
Close the Instant Pot lid and set to high pressure for 10 minutes.
Once done, allow for a natural pressure release for 10 minutes, then do a quick release.
Season with salt and pepper to taste.
Serve hot, garnished with fresh parsley.
Notes:
You can adjust the seasoning to your taste. This soup can be stored in the refrigerator for up to 5 days or frozen for up to 3 months.
