  • 1 cup dried lentils
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 0.5 teaspoon turmeric
  • 4 cups vegetable broth
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions: 

  • Rinse the lentils under cold water and set aside.
  • Turn on the Instant Pot to sauté mode and add a bit of oil.
  • Sauté the onion, carrots, celery, and garlic until softened.
  • Add the cumin, paprika, and turmeric, and cook for another minute.
  • Pour in the vegetable broth and add the lentils.
  • Close the Instant Pot lid and set to high pressure for 10 minutes.
  • Once done, allow for a natural pressure release for 10 minutes, then do a quick release.
  • Season with salt and pepper to taste.
  • Serve hot, garnished with fresh parsley.

Notes:

You can adjust the seasoning to your taste. This soup can be stored in the refrigerator for up to 5 days or frozen for up to 3 months.
