Ingredients:  

Main Ingredients

  • 2 lbs carrots peeled and grated
  • 1 cup sugar
  • 1 cup whole milk
  • 1/4 cup ghee clarified butter
  • 1/2 cup chopped nuts almonds, cashews, pistachios
  • 1/2 tsp cardamom powder

Instructions: 

  • Turn on the Instant Pot to sauté mode and add ghee.
  • Add the grated carrots and sauté for 5 minutes.
  • Add milk and mix well. Close the lid and cook on high pressure for 5 minutes.
  • Release the pressure naturally and open the lid. Add sugar and cook on sauté mode until the mixture thickens.
  • Add cardamom powder and chopped nuts. Mix well and serve hot.

Notes:

For a richer flavor, you can add a few tablespoons of condensed milk.
