Ingredients:  

Main Ingredients

  • 3 lbs pork shoulder cut into chunks
  • 1 cup orange juice
  • 0.5 cup lime juice
  • 0.25 cup white vinegar
  • 3 cloves garlic minced
  • 2 tsp ground cumin
  • 2 tsp dried oregano
  • 1 tsp ground cloves
  • 1 tsp ground cinnamon
  • to taste Salt
  • to taste Pepper
  • optional Banana leaves

Instructions: 

  • In a bowl, mix together orange juice, lime juice, vinegar, garlic, cumin, oregano, cloves, cinnamon, salt, and pepper.
  • Place pork in the Instant Pot and pour the marinade over the meat. Mix well to coat the pork.
  • If using banana leaves, line the Instant Pot with them before adding the pork.
  • Close the Instant Pot and set it to high pressure for 1 hour.
  • Once done, allow for natural pressure release before opening the Instant Pot.
  • Shred the pork using two forks and mix it with the juices in the pot.
  • Serve the Cochinita Pibil with tortillas, rice, beans, or on its own.
