  • 3 lbs corned beef brisket
  • 1 onion, quartered
  • 4 cloves garlic, smashed
  • 1 cup beef broth
  • 1 cup water
  • 1 tablespoon pickling spice

Instructions: 

  • Place the onion and garlic in the Instant Pot.
  • Put the corned beef on top of the onion and garlic.
  • Sprinkle the pickling spice over the corned beef.
  • Pour in the beef broth and water.
  • Close the Instant Pot lid and set the valve to sealing.
  • Cook on high pressure for 90 minutes.
  • Allow natural pressure release for 10 minutes before quick releasing the remaining pressure.
  • Remove the corned beef from the Instant Pot and let it rest before slicing.
  • Serve with your favorite sides and enjoy!

Notes:

For best results, let the corned beef rest for at least 10 minutes before slicing. This helps retain the juices and makes for a more tender meat.
