Ingredients:  

  • 2 lbs beef chuck roast
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 1 cup beef broth
  • 1 can diced tomatoes
  • 2 tbsp chili powder
  • 1 tbsp cumin
  • to taste Salt and pepper
  • Tortillas, for serving
  • Toppings of choice (sour cream, cheese, salsa, etc.)

Instructions: 

  • Season the beef chuck roast with salt, pepper, chili powder, and cumin.
  • Place the seasoned beef in the Instant Pot and add the chopped onion, minced garlic, beef broth, and diced tomatoes.
  • Close the Instant Pot lid and set to high pressure for 60 minutes.
  • Once done, allow for a natural pressure release for 10 minutes before manually releasing the remaining pressure.
  • Shred the beef using two forks.
  • Serve the shredded beef in tortillas with your favorite toppings.
