Instructions:
In the Instant Pot, combine chicken, bell pepper, onion, garlic, ginger, soy sauce, hoisin sauce, and sesame oil.
Close the lid and set the Instant Pot to high pressure for 10 minutes.
Once done, do a quick release and open the lid.
In a small bowl, mix cornstarch with water to create a slurry. Stir into the chicken mixture to thicken the sauce.
Serve over cooked rice and garnish with green onions.
Notes:
This recipe is perfect for a quick weeknight dinner. Feel free to add more vegetables or adjust the seasoning to your taste.
