Ingredients:  

Main Ingredients

  • 1 lb chicken thighs cut into bite-sized pieces
  • 1 bell pepper sliced
  • 1 onion sliced
  • 3 cloves garlic minced
  • 1 inch piece of ginger grated
  • 1/2 cup soy sauce
  • 1/4 cup hoisin sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon cornstarch
  • Green onions for garnish
  • Cooked rice for serving

Instructions: 

  • In the Instant Pot, combine chicken, bell pepper, onion, garlic, ginger, soy sauce, hoisin sauce, and sesame oil.
  • Close the lid and set the Instant Pot to high pressure for 10 minutes.
  • Once done, do a quick release and open the lid.
  • In a small bowl, mix cornstarch with water to create a slurry. Stir into the chicken mixture to thicken the sauce.
  • Serve over cooked rice and garnish with green onions.

Notes:

This recipe is perfect for a quick weeknight dinner. Feel free to add more vegetables or adjust the seasoning to your taste.
