soy sauce

sesame oil

eggs, beaten
Salt and pepper to taste
Green onions for garnish
Instructions:
Turn on the Instant Pot to sauté mode and heat some oil.
Add the diced chicken and cook until browned.
Add the garlic, onion, and mixed vegetables. Cook until the vegetables are tender.
Stir in the rice, soy sauce, and sesame oil. Add salt and pepper to taste.
Pour in 2 1/2 cups of water and mix everything well.
Close the Instant Pot lid, set to high pressure for 5 minutes, and do a quick release.
Open the lid and push the rice to one side of the pot.
Pour the beaten eggs into the other side and scramble until cooked.
Mix everything together, garnish with green onions, and serve hot.
Notes:
This recipe can be easily customized by adding your favorite vegetables or using brown rice instead of white rice. Adjust the seasoning to your taste.
