Ingredients:

  • 2 cups white rice
  • 1 lb chicken breast, diced
  • 1 cup mixed vegetables (carrots, peas, corn)
  • 2 cloves garlic, minced
  • 1 small onion, diced
  • 3 tablespoons soy sauce
  • 2 tablespoons sesame oil
  • 2 eggs, beaten
  • Salt and pepper to taste
  • Green onions for garnish

Instructions: 

  • Turn on the Instant Pot to sauté mode and heat some oil.
  • Add the diced chicken and cook until browned.
  • Add the garlic, onion, and mixed vegetables. Cook until the vegetables are tender.
  • Stir in the rice, soy sauce, and sesame oil. Add salt and pepper to taste.
  • Pour in 2 1/2 cups of water and mix everything well.
  • Close the Instant Pot lid, set to high pressure for 5 minutes, and do a quick release.
  • Open the lid and push the rice to one side of the pot.
  • Pour the beaten eggs into the other side and scramble until cooked.
  • Mix everything together, garnish with green onions, and serve hot.

Notes:

This recipe can be easily customized by adding your favorite vegetables or using brown rice instead of white rice. Adjust the seasoning to your taste.
