Instructions:
Place a trivet in the Instant Pot and add 1 cup of water.
Put the beets on the trivet.
Close the lid, set the valve to sealing, and cook on high pressure for 15 minutes.
Quick release the pressure and carefully remove the beets.
Let them cool slightly, then peel off the skin.
Slice or chop the beets as desired and serve.
