onion, chopped

garlic, minced

dried thyme

Salt and pepper

olive oil
Instructions:
Season the pork roast with salt, pepper, thyme, and rosemary.
Set the Instant Pot to sauté mode and heat the olive oil.
Sear the pork roast on all sides until browned, then remove and set aside.
Add the chopped onion and garlic to the Instant Pot and sauté until softened.
Pour in the broth and deglaze the pot, scraping up any browned bits from the bottom.
Return the pork roast to the Instant Pot.
Close the lid, set the valve to sealing, and cook on high pressure for 60 minutes.
Allow for a natural pressure release for 10 minutes, then do a quick release.
Remove the pork roast from the Instant Pot and let it rest before slicing.
Serve the pork roast with the onions and garlic from the pot as a gravy.
Notes:
For extra flavor, you can marinate the pork roast in the seasoning for a few hours before cooking.
