Ingredients:  

Main Ingredients

  • 2 lb pork roast
  • 1 cup beef or chicken broth
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • to taste Salt and pepper
  • 2 tbsp olive oil

Instructions: 

  • Season the pork roast with salt, pepper, thyme, and rosemary.
  • Set the Instant Pot to sauté mode and heat the olive oil.
  • Sear the pork roast on all sides until browned, then remove and set aside.
  • Add the chopped onion and garlic to the Instant Pot and sauté until softened.
  • Pour in the broth and deglaze the pot, scraping up any browned bits from the bottom.
  • Return the pork roast to the Instant Pot.
  • Close the lid, set the valve to sealing, and cook on high pressure for 60 minutes.
  • Allow for a natural pressure release for 10 minutes, then do a quick release.
  • Remove the pork roast from the Instant Pot and let it rest before slicing.
  • Serve the pork roast with the onions and garlic from the pot as a gravy.

Notes:

For extra flavor, you can marinate the pork roast in the seasoning for a few hours before cooking.
