Instructions:
Season the deer roast with salt, pepper, thyme, and rosemary.
Set the Instant Pot to sauté mode and heat olive oil. Brown the deer roast on all sides.
Add chopped onion and garlic, sauté for 2 minutes.
Pour in beef broth and close the lid. Cook on high pressure for 60 minutes.
Allow natural pressure release for 15 minutes, then manually release any remaining pressure.
Remove the deer roast, slice, and serve with the onion gravy.
Notes:
For a richer flavor, you can add a splash of red wine to the beef broth.
