Ingredients:  

Main Ingredients

  • 2 lbs deer roast
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup beef broth
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 2 tbsp olive oil

Instructions: 

  • Season the deer roast with salt, pepper, thyme, and rosemary.
  • Set the Instant Pot to sauté mode and heat olive oil. Brown the deer roast on all sides.
  • Add chopped onion and garlic, sauté for 2 minutes.
  • Pour in beef broth and close the lid. Cook on high pressure for 60 minutes.
  • Allow natural pressure release for 15 minutes, then manually release any remaining pressure.
  • Remove the deer roast, slice, and serve with the onion gravy.

Notes:

For a richer flavor, you can add a splash of red wine to the beef broth.
