Ingredients:  

Main Ingredients

  • 1 lb beef stew meat cubed
  • 1 cup pearl barley
  • 1 onion chopped
  • 2 carrots sliced
  • 2 stalks celery chopped
  • 4 cloves garlic minced
  • 6 cups beef broth
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

Instructions: 

  • Set the Instant Pot to sauté mode and brown the beef stew meat for about 5 minutes.
  • Add in the onion, carrots, celery, and garlic. Cook for another 3-4 minutes.
  • Pour in the beef broth and add the pearl barley and dried thyme. Season with salt and pepper.
  • Close the Instant Pot lid and set to high pressure for 20 minutes.
  • Once done, allow for a natural pressure release for 10 minutes before quick releasing the remaining pressure.
  • Adjust seasoning if needed and serve hot.

Notes:

For a richer flavor, you can sear the beef in batches to ensure even browning. Feel free to add other vegetables like potatoes or peas for added nutrition.
