Ingredients:  

Main Ingredients

  • 1 bunch spinach
  • 1 bunch mustard greens
  • 1 onion, chopped
  • 2 tomatoes, chopped
  • 3 cloves garlic, minced
  • 1 inch piece of ginger, grated
  • 1 green chili, chopped
  • 1 teaspoon cumin seeds
  • 1 teaspoon turmeric
  • 1 teaspoon garam masala
  • to taste Salt
  • 2 tablespoons oil
  • as needed Water

Instructions: 

  • Wash the spinach and mustard greens thoroughly and roughly chop them.
  • Heat oil in the Instant Pot and add cumin seeds. Let them splutter.
  • Add chopped onions, garlic, ginger, and green chili. Saute until onions are translucent.
  • Add chopped tomatoes, turmeric, and salt. Cook until tomatoes are soft.
  • Add the chopped greens and a little water. Close the Instant Pot lid and cook on high pressure for 5 minutes.
  • Release the pressure manually and open the lid. Use an immersion blender to blend the greens to your desired consistency.
  • Add garam masala and adjust salt if needed. Cook for another 2-3 minutes.
  • Serve hot with rice or roti.

Notes:

This dish is a great way to incorporate leafy greens into your diet. You can adjust the spices according to your taste.
