Instructions:
In a bowl, mix vital wheat gluten, nutritional yeast, garlic powder, onion powder, and smoked paprika.
In a separate bowl, whisk together vegetable broth, soy sauce, and tomato paste.
Pour the wet ingredients into the dry ingredients and mix until a dough forms.
Knead the dough for a few minutes, then shape it into a log.
Place the seitan log on a piece of foil and wrap it tightly.
Pour 1 cup of water into the Instant Pot, then place the trivet inside.
Put the foil-wrapped seitan log on the trivet.
Close the Instant Pot, set to high pressure for 30 minutes.
Once done, do a quick release, carefully remove the seitan, unwrap, and let it cool.
Slice or shred the seitan as desired and use in your favorite dishes.
Notes:
Seitan can be stored in the refrigerator for up to a week or frozen for longer storage.
