Ingredients:  

Main Ingredients

  • 2 cups vital wheat gluten
  • 1/4 cup nutritional yeast
  • 2 teaspoons garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1 1/2 cups vegetable broth
  • 2 tablespoons soy sauce
  • 1 tablespoon tomato paste

Instructions: 

  • In a bowl, mix vital wheat gluten, nutritional yeast, garlic powder, onion powder, and smoked paprika.
  • In a separate bowl, whisk together vegetable broth, soy sauce, and tomato paste.
  • Pour the wet ingredients into the dry ingredients and mix until a dough forms.
  • Knead the dough for a few minutes, then shape it into a log.
  • Place the seitan log on a piece of foil and wrap it tightly.
  • Pour 1 cup of water into the Instant Pot, then place the trivet inside.
  • Put the foil-wrapped seitan log on the trivet.
  • Close the Instant Pot, set to high pressure for 30 minutes.
  • Once done, do a quick release, carefully remove the seitan, unwrap, and let it cool.
  • Slice or shred the seitan as desired and use in your favorite dishes.

Notes:

Seitan can be stored in the refrigerator for up to a week or frozen for longer storage.
