Ingredients:  

Main Ingredients

  • 1 lb boneless, skinless chicken breasts
  • 1 packet taco seasoning
  • 1 cup chicken broth
  • 1 onion, diced
  • 1 bell pepper, sliced
  • 1 can diced tomatoes
  • 1 can black beans, drained and rinsed
  • 1 cup frozen corn
  • 8 small flour tortillas
  • Optional toppings: shredded cheese, sour cream, avocado, cilantro

Instructions: 

  • Place chicken breasts in the Instant Pot.
  • Sprinkle taco seasoning over the chicken.
  • Add chicken broth, onion, bell pepper, diced tomatoes, black beans, and corn.
  • Close the Instant Pot lid and set to high pressure for 10 minutes.
  • Once done, do a quick release of pressure.
  • Shred the chicken using two forks.
  • Serve the chicken mixture in tortillas with desired toppings.

Notes:

Optional toppings include shredded cheese, sour cream, avocado, and cilantro.
