Ingredients:  

Main Ingredients

  • 2 cups cooked rice
  • 1 cup mixed vegetables (carrots, peas, corn)
  • 2 eggs
  • 3 tablespoons soy sauce
  • 2 cloves garlic, minced
  • 1 tablespoon sesame oil
  • Salt and pepper to taste
  • Green onions for garnish

Instructions: 

  • Set the Instant Pot to sauté mode and add a bit of oil.
  • Add minced garlic and sauté for a minute.
  • Add mixed vegetables and stir-fry for a couple of minutes.
  • Push the vegetables to the side and crack in the eggs. Scramble the eggs until cooked.
  • Add cooked rice, soy sauce, sesame oil, salt, and pepper. Stir well to combine.
  • Close the Instant Pot with the lid and set to manual high pressure for 5 minutes.
  • Once done, do a quick pressure release and open the lid.
  • Garnish with chopped green onions before serving.

Notes:

This recipe is perfect for using leftover rice. Feel free to add your favorite vegetables or proteins to customize it to your liking.
