mixed vegetables (carrots, peas, corn)

soy sauce

garlic, minced

sesame oil
Salt and pepper to taste
Green onions for garnish
Instructions:
Set the Instant Pot to sauté mode and add a bit of oil.
Add minced garlic and sauté for a minute.
Add mixed vegetables and stir-fry for a couple of minutes.
Push the vegetables to the side and crack in the eggs. Scramble the eggs until cooked.
Add cooked rice, soy sauce, sesame oil, salt, and pepper. Stir well to combine.
Close the Instant Pot with the lid and set to manual high pressure for 5 minutes.
Once done, do a quick pressure release and open the lid.
Garnish with chopped green onions before serving.
Notes:
This recipe is perfect for using leftover rice. Feel free to add your favorite vegetables or proteins to customize it to your liking.
