  • 1 rabbit, cut into pieces
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 carrots, sliced
  • 2 stalks celery, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 2 cups chicken broth
  • Salt and pepper to taste

Instructions: 

  • Set the Instant Pot to sauté mode and heat the olive oil.
  • Brown the rabbit pieces on all sides, then remove and set aside.
  • Add the onion, carrots, celery, and garlic to the pot. Sauté until softened.
  • Stir in the thyme and rosemary.
  • Return the rabbit to the pot and pour in the chicken broth.
  • Close the lid, set the Instant Pot to high pressure for 20 minutes.
  • Once done, allow for a natural pressure release for 10 minutes, then manually release any remaining pressure.
  • Season with salt and pepper before serving.

Notes:

For a richer flavor, you can add a splash of red wine before sealing the Instant Pot. Serve with crusty bread or over mashed potatoes.
