Salt and pepper to taste
Instructions:
Set the Instant Pot to sauté mode and heat the olive oil.
Brown the rabbit pieces on all sides, then remove and set aside.
Add the onion, carrots, celery, and garlic to the pot. Sauté until softened.
Stir in the thyme and rosemary.
Return the rabbit to the pot and pour in the chicken broth.
Close the lid, set the Instant Pot to high pressure for 20 minutes.
Once done, allow for a natural pressure release for 10 minutes, then manually release any remaining pressure.
Season with salt and pepper before serving.
Notes:
For a richer flavor, you can add a splash of red wine before sealing the Instant Pot. Serve with crusty bread or over mashed potatoes.
