  • 1.5 lbs pork belly cut into chunks
  • 0.5 cup coconut water
  • 3 tbsp fish sauce
  • 3 tbsp sugar
  • 0.5 tsp black pepper
  • 4 hard-boiled eggs peeled
  • Green onions and cilantro for garnish

Instructions: 

  • In the Instant Pot, combine pork belly, coconut water, fish sauce, sugar, and black pepper.
  • Close the lid, set the valve to sealing, and cook on high pressure for 30 minutes.
  • Allow natural pressure release for 15 minutes, then quick release any remaining pressure.
  • Add hard-boiled eggs to the pot and simmer on sauté mode for 10-15 minutes until the sauce thickens.
  • Serve hot, garnished with green onions and cilantro. Enjoy with steamed rice.

Notes:

For a richer flavor, you can marinate the pork belly with the fish sauce and sugar for 15-30 minutes before cooking. Adjust the sweetness and saltiness according to your taste preference.
