Instructions:
Set the Instant Pot to sauté mode and brown the pork shoulder pieces.
Add the onion and garlic, sauté until fragrant.
Add the hominy, diced tomatoes, chicken broth, oregano, cumin, salt, and pepper.
Close the lid, set the Instant Pot to high pressure for 20 minutes.
Once done, let the pressure release naturally for 10 minutes, then do a quick release.
Serve hot with your choice of toppings.
Notes:
For a spicier version, add some chopped jalapeños or a dash of hot sauce.
