Ingredients:  

Main Ingredients

  • 1 pound pork shoulder cut into cubes
  • 1 onion chopped
  • 4 cloves garlic minced
  • 2 cans hominy drained and rinsed
  • 1 can diced tomatoes
  • 4 cups chicken broth
  • 2 teaspoons dried oregano
  • 2 teaspoons ground cumin
  • Salt and pepper to taste

Toppings

  • sliced radishes
  • shredded cabbage
  • chopped cilantro
  • lime wedges

Instructions: 

  • Set the Instant Pot to sauté mode and brown the pork shoulder pieces.
  • Add the onion and garlic, sauté until fragrant.
  • Add the hominy, diced tomatoes, chicken broth, oregano, cumin, salt, and pepper.
  • Close the lid, set the Instant Pot to high pressure for 20 minutes.
  • Once done, let the pressure release naturally for 10 minutes, then do a quick release.
  • Serve hot with your choice of toppings.

Notes:

For a spicier version, add some chopped jalapeños or a dash of hot sauce.
