Ingredients:

  • 6 eggs
  • 1 cup milk
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup diced ham
  • 1 cup shredded cheddar cheese
  • 1 bell pepper, diced
  • 1/2 onion, diced
  • 1 cup frozen hash browns

Instructions: 

  • In a bowl, whisk together eggs, milk, salt, and pepper.
  • Add in ham, cheese, bell pepper, onion, and hash browns. Mix well.
  • Grease the Instant Pot insert and pour in the egg mixture.
  • Close the lid, set to sealing, and cook on high pressure for 25 minutes.
  • Quick release the pressure and carefully remove the casserole from the Instant Pot.
  • Let it cool slightly before slicing and serving.
