Ingredients:  

Main Ingredients

  • 1 eggplant diced
  • 2 zucchinis sliced
  • 1 onion chopped
  • 1 red bell pepper diced
  • 3 cloves garlic minced
  • 1 can diced tomatoes 14 oz
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • Olive oil

Instructions: 

  • Set the Instant Pot to sauté mode and add a bit of olive oil.
  • Sauté the onion and garlic until fragrant.
  • Add the eggplant, zucchini, and bell pepper. Cook for a few minutes.
  • Stir in the diced tomatoes, oregano, basil, salt, and pepper.
  • Close the Instant Pot lid and set to manual high pressure for 5 minutes.
  • Quick release the pressure and stir the ratatouille.
  • Serve hot and enjoy!

Notes:

Serve with crusty bread or over a bed of rice for a complete meal.
