Ingredients:  

Main Ingredients

  • 4 large bell peppers tops cut off and seeds removed
  • 1 pound ground beef
  • 1 cup cooked rice
  • 1 can diced tomatoes
  • 1 cup shredded cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • to taste salt
  • to taste pepper

Instructions: 

  • Cut the tops off the bell peppers and remove the seeds.
  • In a bowl, mix together the ground beef, cooked rice, diced tomatoes, shredded cheese, garlic powder, onion powder, salt, and pepper.
  • Stuff the bell peppers with the mixture.
  • Pour 1 cup of water into the Instant Pot and place the trivet inside.
  • Arrange the stuffed peppers on the trivet.
  • Close the Instant Pot lid and set to high pressure for 10 minutes.
  • Once done, do a quick release and carefully remove the stuffed peppers.

Notes:

For a vegetarian version, substitute ground beef with a plant-based meat alternative or additional vegetables.
