Ingredients:  

Main Ingredients

  • 1 lb ground beef
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 can (28 oz) diced tomatoes
  • 1 can (8 oz) tomato sauce
  • 4 cups beef broth
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 1/2 cups broken lasagna noodles
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • Fresh basil, for garnish

Instructions: 

  • Set the Instant Pot to sauté mode and brown the ground beef with the onion and garlic.
  • Add the diced tomatoes, tomato sauce, beef broth, basil, oregano, salt, and pepper to the pot. Stir to combine.
  • Break the lasagna noodles into smaller pieces and add them to the pot.
  • Close the lid and set the Instant Pot to manual high pressure for 5 minutes.
  • Once the cooking time is up, do a quick pressure release.
  • Stir the soup and serve topped with mozzarella and Parmesan cheese. Garnish with fresh basil.
