Ingredients:  

Main Ingredients

  • 3 lb chuck roast
  • 1 tbsp olive oil
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 1 cup beef broth
  • 2 tbsp Worcestershire sauce
  • 1 tsp dried thyme
  • Salt and pepper to taste

Instructions: 

  • Season the chuck roast with salt and pepper.
  • Set the Instant Pot to sauté mode and heat the olive oil.
  • Sear the chuck roast on all sides until browned. Remove and set aside.
  • Add onions and garlic to the pot, sauté until softened.
  • Pour in beef broth, Worcestershire sauce, and thyme. Stir well.
  • Return the chuck roast to the pot.
  • Close the lid, set to high pressure for 60 minutes.
  • Natural release for 15 minutes, then quick release.
  • Remove the chuck roast, slice, and serve with the gravy.

Notes:

For an even richer flavor, consider adding a splash of red wine to the broth mixture. Serve with mashed potatoes or roasted vegetables for a complete meal.
