Ingredients:  

Main Ingredients

  • 2 lbs oxtail
  • 1 onion, chopped
  • 2 carrots, sliced
  • 2 stalks celery, chopped
  • 3 cloves garlic, minced
  • 1 cup beef broth
  • 1 can diced tomatoes
  • 1 tsp thyme
  • to taste Salt and pepper

Instructions: 

  • Season oxtail with salt and pepper.
  • Turn on the Instant Pot to sauté mode and brown oxtail on all sides.
  • Add onions, carrots, celery, and garlic. Cook until softened.
  • Pour in beef broth, diced tomatoes, and thyme. Stir to combine.
  • Close the lid, set to high pressure, and cook for 45 minutes.
  • Release pressure naturally for 10 minutes, then quick release.
  • Serve hot and enjoy!
