Ingredients:  

Main Ingredients

  • 1 cup dried lima beans
  • 4 cups water
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 bay leaf
  • 1 tablespoon olive oil

Instructions: 

  • Rinse the lima beans under cold water.
  • In the Instant Pot, combine the lima beans, water, onion, garlic, salt, pepper, and bay leaf.
  • Close the lid, set the valve to sealing, and cook on high pressure for 20 minutes.
  • Allow natural pressure release for 5 minutes, then manually release any remaining pressure.
  • Discard the bay leaf and stir in the olive oil.
  • Serve the lima beans hot as a side dish or over rice.

Notes:

Feel free to add more spices or herbs to suit your taste.
