Instructions:
Rinse the lima beans under cold water.
In the Instant Pot, combine the lima beans, water, onion, garlic, salt, pepper, and bay leaf.
Close the lid, set the valve to sealing, and cook on high pressure for 20 minutes.
Allow natural pressure release for 5 minutes, then manually release any remaining pressure.
Discard the bay leaf and stir in the olive oil.
Serve the lima beans hot as a side dish or over rice.
