Instructions:
Place the sliced potatoes in the Instant Pot.
Add chicken broth, garlic powder, onion powder, paprika, salt, and pepper.
Close the lid and set the Instant Pot to manual high pressure for 5 minutes.
Once done, do a quick release and carefully open the lid.
Stir in the cheddar cheese and sour cream until melted and creamy.
Serve the cheesy potatoes garnished with chopped chives.
Notes:
For a spicier version, you can add a pinch of cayenne pepper or some chopped jalapenos.
