Ingredients:  

Main Ingredients

  • 2 pounds potatoes peeled and sliced
  • 1 cup chicken broth
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 0.5 teaspoon paprika
  • Salt and pepper to taste
  • 1 cup shredded cheddar cheese
  • 0.5 cup sour cream
  • Chopped fresh chives for garnish

Instructions: 

  • Place the sliced potatoes in the Instant Pot.
  • Add chicken broth, garlic powder, onion powder, paprika, salt, and pepper.
  • Close the lid and set the Instant Pot to manual high pressure for 5 minutes.
  • Once done, do a quick release and carefully open the lid.
  • Stir in the cheddar cheese and sour cream until melted and creamy.
  • Serve the cheesy potatoes garnished with chopped chives.

Notes:

For a spicier version, you can add a pinch of cayenne pepper or some chopped jalapenos.
