Ingredients:  

Main Ingredients

  • 4 large artichokes
  • 1 lemon, halved
  • 4 cloves garlic, minced
  • 4 tablespoons olive oil
  • Salt and pepper to taste
  • 1 cup water

Instructions: 

  • Trim the top off the artichokes and cut the stems so they can stand upright.
  • Rub the cut parts with lemon to prevent browning.
  • In a bowl, mix garlic, olive oil, salt, and pepper. Stuff this mixture between the leaves of the artichokes.
  • Place a trivet in the pressure cooker, add water, and place the artichokes on top.
  • Cook on high pressure for 10 minutes.
  • Quick release the pressure and cook until tender.
  • Serve with a side of melted butter or aioli for dipping.

Notes:

For an extra flavor boost, try adding some fresh herbs like thyme or rosemary to the garlic mixture.
