Ingredients:  

  • 1.5 lbs boneless, skinless chicken thighs cut into bite-sized pieces
  • 1 onion finely chopped
  • 3 cloves garlic minced
  • 1 inch piece of ginger grated
  • 1 can diced tomatoes 14 oz
  • 0.5 cup chicken broth
  • 0.25 cup butter
  • 0.25 cup heavy cream
  • 1 tablespoon garam masala
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions: 

  • Set the Instant Pot to sauté mode and melt the butter. Add the onions, garlic, and ginger, and cook until softened.
  • Add the chicken pieces and cook until browned on all sides.
  • Stir in the diced tomatoes, chicken broth, garam masala, turmeric, cumin, paprika, salt, and pepper.
  • Close the Instant Pot lid and set to high pressure for 10 minutes.
  • Once done, do a quick pressure release and stir in the heavy cream.
  • Serve the butter chicken over rice, garnished with fresh cilantro.
