Ingredients:  

Main Ingredients

  • 1.5 lbs chicken thighs boneless and skinless, cut into chunks
  • 1 onion chopped
  • 2 carrots sliced
  • 2 celery stalks chopped
  • 3 potatoes peeled and diced
  • 2 cloves garlic minced
  • 1 teaspoon thyme
  • 1 teaspoon rosemary
  • 1 bay leaf
  • 4 cups chicken broth
  • to taste salt and pepper
  • 2 tablespoons olive oil

Instructions: 

  • Set the pressure cooker to sauté mode and heat olive oil. Add chicken pieces and brown them on all sides.
  • Add onions, carrots, celery, and garlic. Sauté for a few minutes until vegetables are slightly softened.
  • Stir in thyme, rosemary, and bay leaf. Pour in chicken broth and add potatoes. Season with salt and pepper.
  • Close the pressure cooker lid and set to high pressure for 10 minutes.
  • Once done, allow natural pressure release for 5 minutes, then do a quick release.
  • Adjust seasoning if needed and serve hot.

Notes:

For a thicker stew, you can mash some of the potatoes after cooking.
