boneless and skinless, cut into chunks

onion

sliced

celery stalks

potatoes
peeled and diced

garlic
minced

teaspoon
thyme

teaspoon
rosemary

bay leaf

chicken broth
to taste
salt and pepper

olive oil
Instructions:
Set the pressure cooker to sauté mode and heat olive oil. Add chicken pieces and brown them on all sides.
Add onions, carrots, celery, and garlic. Sauté for a few minutes until vegetables are slightly softened.
Stir in thyme, rosemary, and bay leaf. Pour in chicken broth and add potatoes. Season with salt and pepper.
Close the pressure cooker lid and set to high pressure for 10 minutes.
Once done, allow natural pressure release for 5 minutes, then do a quick release.
Adjust seasoning if needed and serve hot.
Notes:
For a thicker stew, you can mash some of the potatoes after cooking.
