Ingredients:  

Main Ingredients

  • 1 lb carrots peeled and chopped
  • 1 onion chopped
  • 2 cloves garlic minced
  • 4 cups vegetable broth
  • 1 tsp ground cumin
  • 1/2 tsp ground ginger
  • Salt and pepper to taste
  • 1/4 cup heavy cream optional
  • Fresh parsley for garnish

Instructions: 

  • Place carrots, onion, garlic, vegetable broth, cumin, ginger, salt, and pepper in the Instant Pot.
  • Close the lid and set the valve to sealing. Cook on high pressure for 10 minutes.
  • Quick release the pressure and carefully open the lid.
  • Use an immersion blender to blend the soup until smooth.
  • Stir in the heavy cream if using.
  • Serve hot, garnished with fresh parsley.
