Ingredients:  

Main Ingredients

  • 3 lb chuck roast
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 cup beef broth
  • 1 cup red wine
  • 2 tbsp tomato paste
  • 2 tbsp Worcestershire sauce
  • 2 bay leaves
  • to taste Salt and pepper
  • 2 tbsp olive oil

Instructions: 

  • Season the chuck roast with salt and pepper.
  • Set the Instant Pot to sauté mode and heat olive oil. Brown the roast on all sides.
  • Add onions and garlic, sauté until fragrant.
  • Pour in beef broth, red wine, tomato paste, Worcestershire sauce, and add bay leaves.
  • Close the Instant Pot lid, set to high pressure for 60 minutes.
  • Once done, allow for natural pressure release.
  • Remove the roast and slice. Serve with the red wine sauce.
