Ingredients:  

Main Ingredients

  • 1.5 lbs beef stew meat cut into cubes
  • 1 onion chopped
  • 2 cloves garlic minced
  • 1 bell pepper chopped
  • 1 can diced tomatoes
  • 1 cup beef broth
  • 2 tbsp flour
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper to taste
  • 2 tbsp oil

Instructions: 

  • Set the Instant Pot to sauté mode and heat oil.
  • Add beef cubes and brown on all sides.
  • Add onions, garlic, and bell pepper. Cook until softened.
  • Stir in flour, cumin, chili powder, salt, and pepper.
  • Pour in diced tomatoes and beef broth. Stir well.
  • Close the lid, set to high pressure for 25 minutes.
  • Quick release pressure, open lid, and stir.
  • Serve hot over rice or with tortillas.
