Ingredients:  

Main Ingredients

  • 1 bunch kale washed and chopped
  • 1 tablespoon olive oil
  • 2 cloves garlic minced
  • 0.5 cup vegetable broth
  • Salt and pepper to taste

Instructions: 

  • Set the Instant Pot to sauté mode and heat the olive oil.
  • Add the minced garlic and sauté for 1 minute until fragrant.
  • Add the chopped kale and sauté for another 2 minutes.
  • Pour in the vegetable broth and season with salt and pepper.
  • Close the Instant Pot lid and set to manual high pressure for 5 minutes.
  • Once done, quick release the pressure and serve the kale hot.

Notes:

This recipe is a great way to incorporate more greens into your diet. Feel free to add other seasonings or a squeeze of lemon juice for extra flavor.
