Ingredients:  

Main Ingredients

  • 2 pounds beef stew meat cut into chunks
  • 1 tablespoon olive oil
  • 1 onion chopped
  • 3 cloves garlic minced
  • 2 cups beef broth
  • 1 cup Guinness beer
  • 2 large carrots sliced
  • 2 large potatoes diced
  • 1 teaspoon dried thyme
  • to taste salt
  • to taste pepper

Instructions: 

  • Set the Instant Pot to sauté mode and heat the olive oil. Add the beef and brown on all sides.
  • Add the onion and garlic, and sauté for a few minutes until fragrant.
  • Pour in the beef broth and Guinness beer, scraping the bottom of the pot to deglaze.
  • Add the carrots, potatoes, thyme, salt, and pepper.
  • Close the Instant Pot, set to high pressure for 35 minutes.
  • Once done, allow for a natural pressure release for 10 minutes before quick releasing the remaining pressure.
  • Serve hot and enjoy!

Notes:

For a thicker stew, you can add a slurry of cornstarch and water at the end and sauté for a few more minutes.
