Ingredients:  

Main Ingredients

  • 1 pound chicken breast, diced
  • 1 cup rice
  • 1 can black beans, drained and rinsed
  • 1 cup corn kernels
  • 1 bell pepper, diced
  • 1 onion, diced
  • 1 can diced tomatoes
  • 1 cup chicken broth
  • 1 tablespoon taco seasoning
  • to taste Salt and pepper

Optional Toppings

  • as desired shredded cheese
  • as desired avocado
  • as desired sour cream
  • as desired cilantro

Instructions: 

  • Place chicken, rice, black beans, corn, bell pepper, onion, diced tomatoes, chicken broth, and taco seasoning in the Instant Pot.
  • Close the lid and set the Instant Pot to high pressure for 10 minutes.
  • Once done, allow for a natural pressure release for 5 minutes, then do a quick pressure release.
  • Season with salt and pepper to taste.
  • Serve the chicken burrito bowl with optional toppings as desired.
