Ingredients:  

Main Ingredients

  • 3 lb rib roast
  • 1 tbsp olive oil
  • to taste Salt and pepper
  • 1 cup beef broth
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 tsp dried thyme
  • 1 tsp dried rosemary

Instructions: 

  • Season the rib roast with salt and pepper.
  • Set the Instant Pot to sauté mode and heat olive oil. Sear the roast on all sides until browned.
  • Add beef broth, onion, garlic, thyme, and rosemary to the Instant Pot.
  • Close the lid, set to high pressure for 45 minutes.
  • Natural release for 10 minutes, then quick release.
  • Remove the roast and let it rest before slicing.

Notes:

For best results, let the roast rest for at least 10 minutes before slicing to retain its juices.
