Instructions:
Season the rib roast with salt and pepper.
Set the Instant Pot to sauté mode and heat olive oil. Sear the roast on all sides until browned.
Add beef broth, onion, garlic, thyme, and rosemary to the Instant Pot.
Close the lid, set to high pressure for 45 minutes.
Natural release for 10 minutes, then quick release.
Remove the roast and let it rest before slicing.
Notes:
For best results, let the roast rest for at least 10 minutes before slicing to retain its juices.
