Ingredients:  

Main Ingredients

  • 3 lb corned beef brisket
  • 1 onion, quartered
  • 4 cloves garlic, minced
  • 1 tablespoon pickling spice
  • 4 cups water
  • 1 head cabbage, cut into wedges
  • 6 carrots, peeled and cut into chunks
  • 6 potatoes, peeled and quartered

Instructions: 

  • Place corned beef brisket, onion, garlic, pickling spice, and water in the Instant Pot.
  • Cook on high pressure for 90 minutes, then do a natural pressure release.
  • Add cabbage, carrots, and potatoes to the Instant Pot.
  • Cook on high pressure for another 5 minutes, then do a quick pressure release.
  • Slice the corned beef and serve with vegetables.

Notes:

For best results, let the corned beef rest for a few minutes before slicing.
