Ingredients:  

Main Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 pound ground turkey
  • 2 medium sweet potatoes, peeled and diced
  • 1 red bell pepper, chopped
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) diced tomatoes
  • 1 cup chicken or vegetable broth
  • 2 tablespoons chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste

Instructions: 

  • Set the Instant Pot to sauté mode and heat the olive oil.
  • Add the onion and garlic, sauté for 2-3 minutes until fragrant.
  • Add the ground turkey and cook until browned, breaking it up with a spoon.
  • Stir in the sweet potatoes, bell pepper, black beans, diced tomatoes, broth, chili powder, cumin, salt, and pepper.
  • Close the Instant Pot lid and set to manual high pressure for 10 minutes.
  • Once done, allow for a natural pressure release for 5 minutes, then do a quick release.
  • Adjust seasoning if needed and serve hot.

Notes:

This recipe is perfect for meal prep and can be stored in the refrigerator for up to 4 days. Reheat in the microwave or on the stovetop before serving.
