Ingredients:  

Main Ingredients

  • 1 lb dried split peas
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, chopped
  • 2 cloves garlic, minced
  • 6 cups vegetable or chicken broth
  • 1 bay leaf
  • Salt and pepper to taste

Instructions: 

  • Rinse the split peas under cold water and drain.
  • Place all ingredients in the Instant Pot and stir to combine.
  • Close the lid and set the valve to sealing. Cook on high pressure for 15 minutes.
  • Allow for a natural pressure release for 10 minutes, then carefully do a quick release.
  • Remove the bay leaf and use an immersion blender to blend the soup to your desired consistency.
  • Season with salt and pepper to taste before serving.

Notes:

This soup can be stored in the refrigerator for up to 5 days or frozen for up to 3 months. Reheat gently on the stove or in the microwave.
