Ingredients:  

Main Ingredients

  • 1.5 lbs oxtail cut into 2-inch pieces
  • 1 eggplant sliced
  • 1 bunch bok choy
  • 0.5 cup peanut butter
  • 1 onion chopped
  • 4 cloves garlic minced
  • 4 cups beef broth
  • 2 tablespoons annatto powder
  • Fish sauce to taste
  • Ground black pepper to taste

Instructions: 

  • Turn on the Instant Pot to sauté mode and sauté the garlic and onion until fragrant.
  • Add the oxtail pieces and brown them on all sides.
  • Stir in the peanut butter, annatto powder, and beef broth.
  • Close the lid, set the Instant Pot to high pressure for 30 minutes.
  • Once done, do a quick pressure release and add the eggplant.
  • Close the lid again and cook on high pressure for an additional 5 minutes.
  • Release the pressure naturally for 10 minutes, then add the bok choy.
  • Season with fish sauce and pepper to taste.
  • Serve hot with steamed rice.
