Ingredients:  

Main Ingredients

  • 1 cup jasmine rice
  • 6 cups chicken or vegetable broth
  • 1 inch piece of ginger, peeled and sliced
  • 2 cloves garlic, minced
  • 1 tablespoon soy sauce

Optional Toppings

  • sliced green onions optional
  • fried shallots optional
  • shredded chicken optional
  • soft-boiled egg optional

Instructions: 

  • Rinse the jasmine rice under cold water until the water runs clear.
  • In the Instant Pot, combine the rinsed rice, broth, ginger, garlic, and soy sauce.
  • Close the lid, set the valve to sealing, and cook on high pressure for 20 minutes.
  • Allow for a natural pressure release for 10 minutes before manually releasing any remaining pressure.
  • Open the lid, stir the congee, and remove the ginger slices.
  • Serve hot with your choice of toppings.
