Instructions:
Season the beef with salt and pepper.
Place all ingredients in the Instant Pot.
Close the lid and set the valve to sealing.
Cook on high pressure for 60 minutes.
Let the pressure release naturally for 15 minutes, then manually release any remaining pressure.
Shred the beef with two forks.
Serve the barbacoa in tacos, burritos, or over rice.
Notes:
For a spicier version, add more chipotle peppers. You can also use this barbacoa as a filling for enchiladas or quesadillas.
