Ingredients:  

Main Ingredients

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 carrots, diced
  • 2 stalks celery, diced
  • 2 cloves garlic, minced
  • 1 pound ham, diced
  • 1 pound dried navy beans, rinsed and picked over
  • 6 cups chicken broth
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

Instructions: 

  • Set the Instant Pot to sauté mode and heat the olive oil.
  • Add the onion, carrots, celery, and garlic. Cook until softened, about 5 minutes.
  • Add the ham, navy beans, chicken broth, thyme, salt, and pepper.
  • Close the Instant Pot lid and set to high pressure for 45 minutes.
  • Once done, allow for a natural pressure release for 10 minutes before quick releasing any remaining pressure.
  • Serve hot and enjoy!

Notes:

This soup is perfect for using up leftover ham. You can also add other vegetables like potatoes or peas for extra flavor and nutrition.
