Ingredients:  

Main Ingredients

  • 2 lbs chicken thighs
  • 1/2 cup soy sauce
  • 1/2 cup vinegar
  • 1/4 cup water
  • 4 cloves garlic minced
  • 1 onion sliced
  • 1 teaspoon black peppercorns
  • 2 bay leaves
  • 1 tablespoon brown sugar
  • 1 tablespoon cooking oil

Instructions: 

  • Place chicken thighs in the Instant Pot.
  • In a bowl, mix soy sauce, vinegar, water, garlic, onion, peppercorns, bay leaves, and brown sugar.
  • Pour the mixture over the chicken in the Instant Pot.
  • Close the lid and set the Instant Pot to high pressure for 15 minutes.
  • Once done, do a quick release and open the lid.
  • Remove the chicken from the pot and set aside.
  • Select sauté mode on the Instant Pot and simmer the sauce until it thickens.
  • Heat oil in a pan and sear the chicken until browned.
  • Serve the chicken with the thickened sauce on top.

Notes:

For a richer flavor, you can marinate the chicken in the sauce mixture for a few hours before cooking.
