Ingredients:  

Main Ingredients

  • 2 pounds beef roast
  • 1 cup beef broth
  • 0.5 cup red wine vinegar
  • 0.25 cup brown sugar
  • 1 onion, sliced
  • 2 cloves garlic, minced
  • 1 tablespoon mustard seeds
  • 1 teaspoon black peppercorns
  • 1 teaspoon salt
  • 4 cloves
  • 2 bay leaves
  • 2 tablespoons vegetable oil

Instructions: 

  • In a bowl, mix together beef broth, red wine vinegar, brown sugar, onion, garlic, mustard seeds, peppercorns, salt, cloves, and bay leaves.
  • Place the beef roast in the Instant Pot and pour the marinade over it.
  • Close the lid and set the Instant Pot to high pressure for 60 minutes.
  • Once done, allow for natural pressure release for 10 minutes before quick releasing the remaining pressure.
  • Remove the beef from the Instant Pot and let it rest before slicing.
  • Strain the cooking liquid and thicken it on the sauté setting if desired.
  • Serve the sliced beef with the sauce on top.

Notes:

For best results, let the beef marinate in the refrigerator for 24-48 hours before cooking.
