Instructions:
In a bowl, mix together beef broth, red wine vinegar, brown sugar, onion, garlic, mustard seeds, peppercorns, salt, cloves, and bay leaves.
Place the beef roast in the Instant Pot and pour the marinade over it.
Close the lid and set the Instant Pot to high pressure for 60 minutes.
Once done, allow for natural pressure release for 10 minutes before quick releasing the remaining pressure.
Remove the beef from the Instant Pot and let it rest before slicing.
Strain the cooking liquid and thicken it on the sauté setting if desired.
Serve the sliced beef with the sauce on top.
Notes:
For best results, let the beef marinate in the refrigerator for 24-48 hours before cooking.
