Ingredients:  

Main Ingredients

  • 1.5 pounds stewing beef cut into chunks
  • 2 tablespoons olive oil
  • 1 onion chopped
  • 2 cloves garlic minced
  • 4 carrots peeled and sliced
  • 4 potatoes peeled and cubed
  • 2 cups beef broth
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

Instructions: 

  • Set the pressure cooker to sauté mode and heat the olive oil.
  • Brown the beef in batches and set aside.
  • Sauté the onion and garlic until fragrant.
  • Add the beef back to the pot along with the carrots, potatoes, beef broth, thyme, salt, and pepper.
  • Close the lid and set the pressure cooker to high pressure for 25 minutes.
  • Once done, allow the pressure to release naturally for 10 minutes before quick releasing.
  • Adjust seasoning if needed and serve hot.

This recipe is perfect for a cozy dinner and can be easily adjusted with different vegetables or seasonings.
