Instructions:
Rinse the lentils and add them to the Instant Pot with water. Cook on high pressure for 8 minutes, then do a quick release.
In a separate pan, heat oil and add cumin seeds. Once they splutter, add onions and sauté until golden brown.
Add tomatoes, turmeric, cumin powder, coriander powder, garam masala, and salt. Cook until tomatoes are soft.
Add the cooked lentils to the pan along with chopped spinach. Mix well and let it simmer for a few minutes.
Serve hot with rice or naan.
