Ingredients:  

Main Ingredients

  • 1 cup yellow lentils (toor dal)
  • 3 cups water
  • 1 tablespoon oil
  • 1 teaspoon cumin seeds
  • 1 onion, chopped
  • 2 tomatoes, chopped
  • 1 teaspoon turmeric powder
  • 1 teaspoon cumin powder
  • 1 teaspoon coriander powder
  • 1 teaspoon garam masala
  • to taste Salt
  • 2 cups chopped spinach

Instructions: 

  • Rinse the lentils and add them to the Instant Pot with water. Cook on high pressure for 8 minutes, then do a quick release.
  • In a separate pan, heat oil and add cumin seeds. Once they splutter, add onions and sauté until golden brown.
  • Add tomatoes, turmeric, cumin powder, coriander powder, garam masala, and salt. Cook until tomatoes are soft.
  • Add the cooked lentils to the pan along with chopped spinach. Mix well and let it simmer for a few minutes.
  • Serve hot with rice or naan.

This dish is perfect for a quick and healthy meal. Adjust the spices according to your taste.
