Ingredients:  

Main Ingredients

  • 1 cup rice
  • 1 can black beans drained and rinsed
  • 1 cup corn
  • 1 bell pepper diced
  • 1 onion diced
  • 1 can diced tomatoes
  • 1 tablespoon taco seasoning
  • 1 cup vegetable broth
  • Salt and pepper to taste

Optional Toppings

  • avocado
  • shredded cheese
  • sour cream
  • cilantro

Instructions: 

  • Add rice, black beans, corn, bell pepper, onion, diced tomatoes, taco seasoning, and vegetable broth to the Instant Pot.
  • Close the lid and set the Instant Pot to manual high pressure for 5 minutes.
  • Once done, allow for a natural pressure release for 5 minutes, then do a quick release.
  • Season with salt and pepper to taste.
  • Serve the burrito bowl with your choice of toppings like avocado, shredded cheese, sour cream, and cilantro.
